Chocolate Mud Pie
Yield: 12 servings
Crust
2 cups (4.8 dl) chocolate cookie crumbs
4 tablespoons butter
Fudge sauce
5 oz (140 g) semi-sweet chocolate (40-45%)
½ cup (1.2 dl) whipping cream
3 tablespoons butter
Filling
4 cups (1 liter) ice cream, softened (coffee or chocolate-flavored)
Method
1. Combine chocolate cookie crumbs and 4 tablespoons melted butter. Press the mixture into the bottom
of a 9 inch (23 cm) springform tin.
2. Break the chocolate into small pieces and melt it with butter over hot water. Mix with whipping cream, and stir until smooth.
Chill 10 minutes. Spread 1/2 cup / 1.2 dl sauce on bottom of chocolate cookie crust, and cool in the freezer.
3. Spread the softened ice cream over the fudge sauce, and freeze for several hours.
4. Heat the remaining sauce over hot water so that it becomes pourable.
5. Wrap a hot wet towel around the springform tin for a few minutes, then remove the sides of the tin.
6. Serve the pie with warm fudge sauce.
